Meals I've Been Loving

Hi. Hope you're all doing well. I simply want to share some meals that I’ve had on repeat this past month. I know sometimes food can get boring (if you allow it to) so, hopefully some of my favorite meals will inspire you to switch things up a bit. 

My green smoothie (above on the left) will always be a favorite. It’s full of flavor and super nutritious. You can find the full recipe here. It contains ingredients like ginger, spirulina, and moringa (to name a few) that are immune boosting agents, which is super important during these times. 

This burrito bowl (above on the right) tastes so amazing. I literally ate this three days straight last week. It contains rice, pinto beans, avocado, oven roasted potatoes all on a bed of green leaf lettuce. Also topped with chipotle sauce.

I’m actually not a huge salad girl until now. Previously, I’ve eaten my salad with oven roasted potatoes which is one of my favorites as well. Recently, I’ve been eating my everything salad. I call it the everything salad because I literally pack it with all of my favorite veggies. It contains green leaf lettuce, cabbage, red onions, tomatoes, green onions, avocado, cilantro, and cucumber (not pictured but I usually add it). I also added vegan buffalo dippers. They’re honestly the best chicken alternative I’ve tried. So good. This salad is topped with Trader Joe’s Everything but the Bagel Seasoning and a small amount of Dairy free blue cheeze dressing. Too much of it will ruin the salad, in my opinion.

Okay so, I’m a smoothie girl for sure. They’re easy and quick to make in the morning. Not to mention, easy to digest first thing in the morning (after an adequate amount of water). My peanut butter + chocolate smoothie (above on the left) contains about a cup of plant mylk, two tbsp of cacao powder, two dates, a tbsp of peanut butter, ⅓ cup of frozen cherries, 1-2 frozen banana(s) and (optional) plant based protein powder. 

I’ve also been loving yogurt bowls (above on the right). I am pretty much obsessed with anything that you can throw in a bowl. This yogurt bowl includes Cashew yogurt, sliced read pears, maple walnut granola, and homemade blueberry jam (which happens to be the star of the show). The blueberry jam is pretty simple. Add a cup of blueberries and a tbsp of honey or maple syrup to a pot on medium heat and let it heat up for about 5 to 10 minutes. This gives enough time for all of the flavors to come together. Afterwards, I like to mash the blueberries a little. Set aside so the blueberry jam can cool off, then add to an airtight jar and refrigerate. The next morning, you’ll have the blueberry jam of your dreams. It is also yum on toast, pb&j, and so much more. Get creative.
